An amazing veggie lasagna, where the noddles are replaced with eggplant.

Recipe Ingredients for Vesagna! A Veggie Lasagna.

1 eggplant
1 onion
2 cloves garlic
1 cup frozen chopped spinach
1 cup whole mushrooms
1 jar ragu
16 oz 1% cottage cheese
2 cups shredded mozzarella cheese
1 cup chopped parsley
2 egg whites

Recipe Directions for Vesagna! A Veggie Lasagna.

  1. Preheat oven to 400.

  2. Thinly slice unpeeled eggplant. Salt both sides of sliced eggplants, and layer in colander and place in the sink. Let rest for at least 20 minutes.

  3. While the eggplant is resting, chop onion, garlic and slice mushrooms. Reserve a small bit of garlic for cheese filling.

  4. Saute onion, garlic and mushrooms until the mushrooms are tender. Add Ragu sauce, and reduce heat to a simmer. Season to taste.

  5. Thaw spinach and squeeze the moisture out of it using a kitchen towel. Fluff spinach and in a separate bowl add cottage cheese, egg whites and chopped parsley.

  6. Rinse eggplant and pat dry.

  7. In a 13x9 Pyrex dish layer EXACTLY sauce, eggplant, cheese mixture, sauce, eggplant, cheese mixture, eggplant, sauce and top with the mozzarella cheese and bake for 30-40 minutes.
