Very Yummy Lasagna Recipe

use the no-cook lasagna noodles. I used 9 of them, which I estimate to be about 2 cups.

Recipe Ingredients for very yummy lasagna

2 cups egg noodle
2 cups low fat mozzarella
1 cup parmesan
24 ounces tomato sauce
8 ounces tomato paste
24 ounces diced tomatoes
1 cup cauliflower
1 cup zucchini
1/4 cup summer squash
1/2 cup onion
1 cup white mushrooms
3/4 pound lean ground beef
1 link italian sausage
1/4 tsp salt
1/4 cup olive oil

Recipe Directions for very yummy lasagna

  1. make your sauce from the tomato ingredients and season with basil, oregano, and salt and pepper.

  2. allow sauce to simmer as you perform the next steps.

  3. season the ground beef with Old Bay or some other tasty blend, brown the ground beef and then set aside to drain

  4. brown the italian sausage and set aside to drain

  5. place the cauliflower in a food processor and grind fine; this is a good ricotta cheese substitute

  6. process the other vegetables to dice

  7. mix together all vegetables except the mushrooms and cook in a skillet in olive oil until slightly tender

  8. in a rectangular 9 inch pan, place 1/4 to 1/2 cup of sauce and then 3 lasagna noodles

  9. spread the vegetable mixture on top of the noodles

  10. spread 1 cup of mozarella and 1/4 cup of parmesan on the vegetable mixture

  11. layer the mushrooms on top

  12. layer 3 more lasagna noodles on top of the cheese and vegetable layer

  13. spread enough sauce on the noodles to cover them thinly

  14. layer the italian sausage and ground beef on the sauce

  15. cover with 3 more lasagna noodles

  16. spread the rest of the sauce on the noodles.

  17. top with the rest of the cheese

  18. use toothpicks, if necessary, to keep the foil cover from touching the cheese

  19. bake at 375 for 45 minutes

  20. allow to stand uncovered for 10 minutes before serving
