A lighter version of Mom's classic dish, and still super filling

Recipe Ingredients for Very Veggie Meatloaf

1 beets (2" dia, sphere) Beets
1 cup, cubes Turnips
1 small Turnips
33.3 grams Parsnips
1 medium Squash, Summer, Zucchini, Includes Skin
1 medium Carrots
0.5 medium (2-1/2" dia) Onions
3 clove Garlic
1 tbsp Rosemary, Fresh
1 serving Sea Salt
5.5 oz 90% Lean Ground Beef, Fresh
2 slice Dark Rye
2 slice Dark Rye
1 medium Egg, Whole
4 tablespoons Tomato Paste
2 tsp Organic Stone Ground Mustard
4 tsp Agave Syrup

Recipe Directions for Very Veggie Meatloaf

  1. Grate all of the vegetables into a bowl. Add the salt, black pepper, beef and crumble the Ryvita crackers into the bowl. Mix well and add the egg. Mix thoroughly (best done by hand)

  2. To make the glaze: mix together the tomato paste, mustard and agave nectar. If the sauce seems too thick, add a little water at a time to get it to your desired consistency.

  3. Preheat oven to 375

  4. Press meatloaf mixture into a standard loaf tin. (Glass pyrex work best) Line a baking sheet with aluminum foil. Flip the loaf pan onto the sheet, keeping the meatloaf covered with the tin. Bake for 15 minutes.

  5. After 15 minutes, lift off the loaf pan and spread the glaze over the top of the meatloaf. Continue to bake for approximately 30 minutes.
