There are lots of veggies in the marinara sauce, makes it really good for other applications like pizza. Good make ahead as well.

Recipe Ingredients for Very Veggie Marinara with Pasta and Chicken Sausage

56 oz Fire Roasted Crushed Tomatoes
1 cup, chopped Onions
2 carrot (7-1/2") Carrots
2 clove Garlic
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
1/2 tsp Salt, Table
1 tsp Pepper, Black
1 tbsp, crumbled Bay Leaf
1 tbsp Oregano, Ground
1 tbsp Vinegar Balsamic
1 Shot Vodka
16 oz Mezzi Rigatoni
4 link Smoked Chicken and Turkey Sausage Italian Style with Mozzarella Cheese Fully Cooked
1 oz Parmigiano Reggiano

Recipe Directions for Very Veggie Marinara with Pasta and Chicken Sausage

  1. Sauté prepared sausage in dutch oven, put aside in bowl when done

  2. Add some olive oil, sauté onion and garlic until soft and translucent

  3. Sauté carrots, bell pepper, salt and pepper until soft

  4. Deglaze the pan with a shot of vodka, scrape up some of the goodness from the bottom

  5. Pour in 2, 28 oz cans of fire roasted tomatoes, bay leaves , and 1 tbsp. dried oregano

  6. Let it simmer on low for 30 minutes

  7. Turn off the heat and let it cool down for about 10 minutes

  8. Puree sauce with a stick blender

  9. Add 1 tbsp. balsamic vinegar and meat back to sauce. Toss with 1 lb. of pasta.

  10. top with cheese
