Delicious, very healthy Lentil soup to simmer in your crockpot.

Recipe Ingredients for Very Veggie Lentil Soup

1/2 cup dry lentils
1 1/2 cups low sodium vegetable broth
14 1/2 oz. canned tomatoes
2/3 cup chopped onion
4 cloves garlic
2 stalks celery

Recipe Directions for Very Veggie Lentil Soup

  1. Saute onion, garlic, peppers, leeks, kale. Soak lentil about 2 hours and rinse. Soak Barley 2 hours and rinse.

  2. Add vegetable broth to crock pot, stir in tomatoes, lentils, barley and sauted vegetables.

  3. Simmer in crock pot on High 3 -4 hours or Low 4 -6 hours. Season to taste - I used curry, cumin, thyme, salt, rosemary.

  4. Serve w/ crusty bread and glass of wine!
