Recipe Ingredients for Very Vegetable Soup

1/4 cup tomato paste
3 cups water
2 tbsp green bell pepper
2 tbsp red bell pepper
3 tbsp scallions
2/3 cups onion
1 tsp Worcestershire sauce
1/2 tsp Italian seasoning
1/4 tsp mustard powder
1 tsp beef bouillon
2 cloves garlic, minced
2 cups green beans
1 1/3 cups carrot
1/2 cup yellow squash

Recipe Directions for Very Vegetable Soup

  1. Get out a medium sized pot. Coarsely chop peppers, and scallions. Slice scallions. Add to pot.

  2. Coarsely chop onion. Sauté in small skillet until onion is tender. Add to medium pot. Add tomato paste and two cups water to pot, then place pot over medium heat. Add Italian seasoning, Worcestershire sauce, mustard powder, and beef bouillon. Bring this mixture to a boil, then reduce to a simmer.

  3. Be sure to periodically check the broth and stir.

  4. While the broth is simmering, prepare green beans; set aside. Prepare yellow squash by dicing into medium-sized chunks. Add squash and beans to broth. Add 1 cup water to broth.

  5. Cut carrots into bite sized pieces and place in microwave-safe bowl. Add water halfway up produce, then cover the bowl with plastic wrap. Microwave for two minutes. Remove from microwave and drain off liquid; set carrots aside for at least ten minutes.

  6. Add carrots and simmer soup for another ten minutes. Add water to thin if desired and bring back to simmer, or serve immediately with warm bread.

  7. Makes 5, 1-cup servings
