Recipe Ingredients for Very Simple Blueberry Muffins

3/4 cup whole wheat flour
3/4 cup all purpose flour
1/2 cup white sugar
2 tsp white sugar
1 teaspoon salt
2 teaspoons baking powder
3/4 cup soymilk
2 tbsp canola oil
2 tbsp unsweetened applesauce
1 1/4 cup frozen blueberries

Recipe Directions for Very Simple Blueberry Muffins

  1. Preheat oven to 400F. Place baking cups in a muffin pan.

  2. Combine flour, sugar, salt, and baking powder together in a mixing bowl. Add soy milk and oil. Mix.

  3. Fold in blueberries.

  4. Pour into baking cups and bake for 25-30 minutes.

  5. Makes: about 8 muffins, Preparation time: 5 minutes, Cooking time: 30 minutes
