Recipe Ingredients for Very Blueberry Muffins

1 cup unbleached flour
1 cup whole wheat flour
2 tsp. baking powder
1/2 tsp. salt
1 cup yogurt
1 tsp. baking soda
1 egg
1/2 cup vegetable oil
1/2 cup sugar
1 tsp. vanilla
1 cup blueberries

Recipe Directions for Very Blueberry Muffins

  1. Sift together flour, baking powder and salt. In a separate bowl, combine yogurt with soda; set aside. Beat egg in third bowl, add sugar, oil and vanilla and stir to combine. Add flour mixture and yogurt mixture alternately to the egg mixture and stir just until blended. Fold in blueberries.

  2. Lightly grease or line muffin tins.

  3. Bake at 350 degrees for 25 - 30 minutes
