From the Doubleday Cookbook. Not a low-cal recipe, but very very good for now and then. Excellent alone or with a fruit topping.

Recipe Ingredients for The Very Best Cheese Cake

18 graham crackers, crumbled (1 1/2 cups)
1/4 cup sugar
5 tablespoons butter or margarine, melted
16 ounces cream cheese, softened
2 eggs
1/2 cup sugar
1 teaspoon vanilla
1 cup sour cream
1/4 cup sugar
1 teaspoon vanilla

Recipe Directions for The Very Best Cheese Cake

  1. Pre-heat oven to 375.

  2. Mix first 3 ingredients and form into a crust for a 9" spring form pan. Pat firmly into the bottom and one third of the way up the sides.

  3. Beat the next 4 ingredients of the filling with a rotary beater or electric mixer until satiny and pour into crust.

  4. Bake 20 minutes, remove from oven, and cool 15 minutes.

  5. Meanwhile, raise oven to 475. Blend last 3 topping ingredients and spread gently over cheese filling.

  6. Return pie to oven and bake 10 minutes longer. Cool in pan to room temperature, then cover with foil and chill 10-12 hours before serving. Cut into slim wedges.
