(updated 8/7/10) A different type of mixing method is used - it's similar to the reverse creaming or biscuit mixing method. This helps keep the muffins moist, even if you overmix. A ton of berries, whole wheat flour, and rolled oats make these healthier than most muffins. Use all of one type of berry, or a mix of berries.

Recipe Ingredients for Very Berry Muffins

1 1/2 cups all purpose flour
1 cup whole wheat flour
1 cup rolled oats
1 tspn baking soda
2 tspn baking powder
1/2 tspn table salt
1/2 cup canola oil
1 1/2 cups Splenda sugar substitute
20 oz mixed berries, (about 4 cups) (blueberries, blackberries, diced strawberries, etc.)
1 Tbsn lemon juice
2 large eggs
2 Tbsn honey
1 cup skim milk

Recipe Directions for Very Berry Muffins

  1. Preheat oven to 400 degrees F. Spray muffin pan with non-stick spray. (18 muffins total)

  2. Sift together flours, baking soda and powder, and salt. Wisk in rolled oats.

  3. Add oil to dry ingredients. Mix so it is like wet sand.

  4. In seperate bowl, mash 1/2 the berries (about 2 cups), lemon juice, and Splenda. (a potato masher works well, it doesn't have to be perfectly smooth.) Add eggs, honey, and milk and stir to combine.

  5. Add wet to dry. Only partially stir together - about 3 or 4 stirs with a spoon or rubber spatula. Let the batter rest for about 5 - 10 minutes, this will help the flour and rolled oats absorb the extra liquid. Give the batter another 4 or 5 stirs to combine (it does not, and will not, have to be completely smooth.) Gently fold in the remaining berries. Divide equally between muffin pan (18 total.)

  6. Bake 17 - 20 minutes.
