Use a vertical chicken roaster, or beer-can roaster, or upright rotisserie

Recipe Ingredients for Vertical roasted chicken

3 pound chicken
1/2 teaspoon garlic salt
1/2 teaspoon pepper
1 teaspoon paprika
1/4 teaspoon chili powder
1 onion, quartered
1 stalk celery

Recipe Directions for Vertical roasted chicken

Wash chicken and wipe it dry. Mix spices together and rub on chicken. Cut onion into quarter and cut celery stalk in half. Insert the vegetables into the cavity of the chicken. Put chicken on rotisserie and roast for about an hour. Skim the fat off the drippings, or use a fat separator and thicken with flour or cornstarch if gravy is desired. Giblets can be cooked in the drip tray and chopped in the gravy.
