670 grams Gold Medal Better for Bread Flour
1 serving Fleischmann's Rapid Rise Yeast
380 grams Water
11 grams Salt
14 grams Extra Virgin Olive Oil

Recipe Directions for Versatile Bread Recipe

  1. Sprinkle the yeast into room temperature water and allow it to bloom. Once bubble start forming, add 350g flour and mix on low in stand mixer for 5 minutes or so. Tightly cover mixing bowl with plastic wrap and let stand for 3-4 hours.

  2. Remove the plastic wrap and turn mixer to lowest speed. Add the salt and about 250g of the remaining flour and allow the ingredients to combine.

  3. Increase mixer speed to the next highest setting and allow the dough to mix for about 10 minutes.

  4. Add the oil to the dough and mix for 20 ? 30 seconds.

  5. Of the remaining flour, dust the bench and remove the dough from the mixer to the bench. Sprinkle the top with some of the reserve flour and gently start folding the dough from 12 O?clock to the center, then rotating dough 90 degrees and repeating.

  6. Continue this process for a few turns or until becomes smooth and elastic.

  7. Form the dough into ball, flattening slightly and thoroughly flour the top and bottom of the dough. Place it into a large glass or metal bowl and cover tightly with plastic wrap. Allow to rise until doubled in size. Being careful to tear the dough as little as possible, fold the dough 1/3 over from one side and then the opposite side. Then fold the dough in half from side not previously folded to form it into a rough square.

  8. Cover again with plastic wrap and allow to rise again until doubled in size.

  9. Remove dough onto floured bench and form into 1 very large loaf, 2 medium loaves or form into individual rolls in the size of your choosing and place then onto a sheet pan or baking vessel of your choice. Corn meal can be sprinkled on the pan or non-stick spray or parchment paper can be used to line the baking pan.

  10. Cover with plastic wrap which has been sprayed lightly with non-stick coating and allow to rise until doubled in size.

  11. Pre-heat oven to 425F degrees. Just before placing the dough into oven, lightly mist it with water. Bake for 10 minutes then, if needed, turn the baking pan 180- degrees. Reduce the temperature to 375F degrees and bake until the bread reaches internal temperature of 190F for larger loaves or 200F for small rolls.

  12. Remove the baked bread from the oven and place on cooling rack.
