An attempt to cut the calories. A nonstick skillet, or even better a nonstick wok is necessary for this recipe. If you use a plain pan, you will need to add more oil, which will boost the calories. Do not use freshly cooked rice. It will be too wet, and will become a sticky, gluey mess in the pan.

Recipe Ingredients for Veronica's Shrimp Fried Rice 1

4 cups white rice, leftover and refrigerated at least overnight
1/2 cup soy sauce
1 tbl sesame oil
1/2 vidalia onion (or other sweet onion)
1 cup green peas, frozen
4 eggs
2 tbl canola oil
3/4 lb shrimp
1 salt to taste
1/4 pound barbecue pork

Recipe Directions for Veronica's Shrimp Fried Rice 1

  1. Chop the onion finely.

  2. Beat the eggs with 2 tsp of the soy sauce and a dash of sesame oil.

  3. Peel the shrimp and chop into bite sized pieces if they are large.

  4. Slice the barbecue pork into thick matchsticks.

  5. If the rice is stuck together, pull it apart with your hands.

  6. Heat a nonstick wok or large nonstick skillet on high until a drop of water skitters and evaporates within 3 seconds.

  7. Add 1 tsp canola oil to the pan and pour in the eggs. Swirl the pan until the eggs cover the bottom. Once the eggs have set, remove from the pan, slice and set on the serving platter.

  8. Add another tsp of oil to the pan and swirl. Add the shrimp to the pan, stirring constantly. Remove when they have just turned pink, and are slightly translucent on the inside. Remove to serving platter.

  9. Add the remaining canola oil and the onions to the wok and cook until wilted. Then add the rice and stir constantly with a spatula to partially brown rice. Add the sesame oil and soy sauce and taste for saltiness. If necessary add salt.

  10. Add back the eggs and shrimp. Add the barbecue pork and green peas and cover pan to heat peas through, about 3 to 5 minutes. Pour onto serving platter.

  11. Serve immediately.
