Excellent weight-loss food: a yummy low-calorie dish in which the fiber from the veggies fills you up and satiates hunger.

Recipe Ingredients for Verdure Giovanna

1 1/2 tsp olive oil
1/8 cup onion, chopped
1 1/2 tsp garlic
1 tsp ginger root, puréed
4 stalks celery, sliced
3 carrots, diced
1/2 cup peas
1/2 cup beans, snap, green
3 chili peppers, hot green, sliced
1 1/2 cup cauliflower
1 cup peas, edible-podded (i.e. snow peas)
1/2 cup broccoli
2 tomatoes, diced
2 tsp cilantro, chopped
2 tsp basil
2 tsp oregano
1/4 tsp rosemary
1/4 tsp thyme
1 tsp cumin
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp cayenne
1 tsp soy sauce, tamari
1/2 cup tomato sauce
1/2 cup salsa
1/2 cup mozzarella, shredded
3 tbs parmesan

Recipe Directions for Verdure Giovanna

  1. Sauté the onion, garlic, and ginger in the olive oil.

  2. Add celery and carrots, and sauté on medium high for 2 minutes.

  3. Add peas, green beans, chili peppers, cauliflower, and pea pods, lower heat to medium, and sauté another 3 minutes.

  4. Add broccoli, tomatoes, herbs, spices, and sauces, stir well, and sauté 1 more minute.

  5. Sprinkle cheeses over the top, cover, and simmer on low heat for 7 minutes.

  6. Serving size = 2 cups. Eat hearty and fill yourself up on this stuff, veggie lovers!
