1 1/2 tsp olive oil
1/2 cup onion, chopped
1 tsp garlic, puréed
1 tsp ginger root, puréed
1 carrot, chopped
1 stalk celery, sliced
2 chili peppers, hot, green, chopped
1 cup peas
1/2 cup beans, snap green
1/2 cup edamame
1 cup pepper, sweet, red, chopped
1 tomato, chopped
1 tsp basil
1 tsp oregano
1/4 tsp rosemary
1/4 tsp thyme
1/2 tsp black pepper
1/2 tsp cumin
1 tsp balsamic vinegar
1 tsp tamari

Recipe Directions for Verdure di Giovanna

  1. Sauté onion, garlic, and ginger in olive oil 2 minutes.

  2. Add carrots, celery, and chili peppers; sauté 3 more minutes.

  3. Add peas, green beans, and edamame; sauté 1 minute if not frozen, 4 minutes if frozen.

  4. Add red bell pepper; sauté 1 minute.

  5. Add tomato and seasonings. Sauté 3 more minutes.
