Recipe Ingredients for Venison Shepherd's Pie

1 lb ground venison
1/2 c chopped onions
1/2 c chopped celery
1/2 c chopped carrots
1 c sliced mushrooms
2 cloves minced garlic
1 T oil
1/2 c edamame
1 tsp Worcestershire sauce
1 T tomato paste
1 c chopped Roma tomatoes
1 tsp turmeric
1/4 tsp salt
1/4 tsp pepper
1/4 tsp red pepper flakes
1/2 tsp thyme
1/2 tsp parsley
16 oz steamed cauliflower
1 T low fat sour cream
1 T fat free Half and Half
1 pinch salt and pepper
1/2 c low fat cheese

Recipe Directions for Venison Shepherd's Pie

  1. Saute vegetables and garlic in oil.

  2. Add venison and brown in vegetables.

  3. Stir in edamame and heat through.

  4. Add tomato paste and chopped tomatoes and cook until blended.

  5. Add Worcestershire and spices and mix well.

  6. Then place cooked cauliflower, sour cream, and half and half into food processor and blend into smooth consistency.

  7. Place the meat portion in a casserole pan and spread on the bottom.

  8. Spread the cauliflower blend evenly over the top.

  9. Sprinkle cheese on top.

  10. Bake in 350 degree oven for 20-25 minutes.
