To decrease the fat in this recipe you could just use 1/2lb of pork sausage, but some is needed to bind the lean venison together. This is great when you have a freezer full of ground venison after hunting season.

Recipe Ingredients for Venison Meat Loaf

1 pound ground venison
1 pound pork sausage
1/4 cup chopped onion
2/3 cup bread crumbs
2 eggs
3/4 cup milk
2 tablespoons parsley
1/2 teaspoon sage
1/2 teaspoon basil
1/2 teaspoon oregano
1 teaspoon salt

Recipe Directions for Venison Meat Loaf

  1. Pre-heat oven to 350 F

  2. In a bowl combine eggs, milk, bread crumbs, onion, and spices.

  3. In another bowl use potato masher to combine venison and pork sausage. Pour in egg mixture and continue to mix until well mixed.

  4. Pat mixture into a 8x4x2-inch loaf pan.

  5. Bake at 350F for 1 to 1.25 hours or until internal temperature registers 160F.
