Venison Chops with Blueberry Compote

Recipe Ingredients for Venison Chops with Blueberry Compote

328 g raw venison
105 g raw blueberries
13 g brown sugar
15 g raw red onion
3 tsp vinegar
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp cinnamon
126 g potato
13 g canola oil

Recipe Directions for Venison Chops with Blueberry Compote

  1. Season small frying pan with about half the oil. Begin cooking venison chops (2) over medium/high heat. Remove chops from pan when nicely seared (medium rare recommended) and hold in warm oven.

  2. Add remaining oil to pan. When hot add thinly sliced or grated potato. Turn only once, remove from pan and hold in warm oven when golden on both sides. (about 8 minutes)

  3. Deglaze pan with small amount of water and add berries, onions, sugar, vinegar and spices. Increase heat and reduce sauce till about as thick as medium syrup.

  4. Arrange potatoes at one side of plate, place venison chop in centre and ladle blueberry compote over top, avoiding potatoes.

  5. Potatoes could be done in a separate pan while cooking chops but I don't like dishes.
