Recipe Ingredients for La Velle's Plum Chutney (from Joan, Fall 2008)

5 pounds plums, purple and unpeeled, halved and pitted
2 pounds yellow onions, coarsely chopped
4 pounds apples, McIntosh, peeled, cored and coarsely chopped
3 cups white vinegar
2 pounds granulated sugar
2 pounds dark brown sugar
1 tbsp allspice
1 tbsp cloves
1 tbsp ginger
3 tbsp salt
1 tsp cayenne

Recipe Directions for La Velle's Plum Chutney (from Joan, Fall 2008)

  1. In a very large kettle, combine plums, onions, apples, and vinegar. Bring to boil. Stir in remaining ingredients.

  2. Again, bring to boil. Reduce heat and simmer UNCOVERED for 1.5 hours. Stir occasionally to prevent scorching.

  3. Meanwhile, sterilize 10 pint jars. Keep in hot water until ready to fill.

  4. Ladle mixture into hot, sterilized jars. Cap immediately.

  5. NOTES from Fall 2008. Used 2 large baskets of plums ... which was essentially a double batch. Started out with the batch split between the soup pot (with the glass lid) and the dutch oven. As the mixture reduced, the pots were combined into the soup pot. The mixture was cooked an extra 0.5 hour to thicken it and to neutralize the colour (i.e., no stark variation in colour).

  6. The filled containers were reboiled in the canner for another 20 minutes to seal before labelling.

  7. Yield = ~6.75 X 500 ml PLUS 8 X 250ml OR ~10-11 X 500ml jars.
