Recipe Ingredients for Vegtable Soup

1 tablespoon olive oil
1 cup potatoes
1 cup carrots
1 cup cauliflower
1 cup celery
1 cup red kidney beans
1 teaspoon salt
1 teaspoon thyme
1 teaspoon oregano
8 cups water
90 grams (Benedicta) Bouillon - Vegetable

Recipe Directions for Vegtable Soup

  1. We will add some more flavor and texture to the soup with one can of diced tomatoes and one can of red beans.

  2. Finally, you can add one cup of starch to the soup. Potatoes, rice or pasta are all great.

  3. Saute the Vegetables

  4. To begin, heat the oil in a large stockpot over medium high heat. Add the onion, and saute it for a few minutes until it begins to get soft.

  5. Now, we will add the rest of the vegetables and saute those for three or four more minutes.

  6. Combine the Ingredients

  7. Add the salt and the spices now, and stir them in so that they coat the vegetables. Now we will add the water and turn the heat up to high until it starts to boil.

  8. Add the bouillon cubes, and stir these in until they dissolve. Now you can add the tomatoes and the beans, and return the soup to a boil.

  9. When the soup is boiling, add whatever starch you are using, and let it cook until it is done.

  10. Serve the Vegetable Soup

  11. Now the soup is ready to enjoy. You can serve it as is, or sprinkle a little bit of grated Parmesan cheese on top and add some croutons.
