Angel Hair Pasta with zucchini, yellow squash and tomatoes.

Recipe Ingredients for Vegtable Parmesan

6 serving Parmesan and Romano Medium 100% Grated Cheese
3 oz Angel Hair
2 medium Squash, Zucchini, Baby
2 small Squash, Summer, All Varieties
2 Medium Tomatoes
2 tsp Garlic Powder
0.5 tsp Sea Salt
2 serving Extra Virgin Olive Oil

Recipe Directions for Vegtable Parmesan

  1. Cook pasta to taste. While water is boiling, slice squash and dice tomatoes.

  2. Put 1 tbl spoon Extra Virgin Olive Oil in small fry pan and add 1/2 cup water. Put in squash and mix in with the water and oil. Add salt and garlic powder and mix in. Place cover over fry pan and let simmer with occasional stirring.

  3. Once noodles done, strain and mix in the diced tomatoes and parmesan. Once the squash is softened, mix in with pasta and tomatoes. Or if you choose, put on top of pasta when you serve.
