2 cup Rice, Brown, Long-grain, Cooked
3 cup Broccoli
2 eggplant, peeled (yield from 1-1/4 lb) Eggplant
4 large whole (3" dia) Tomatoes, Red, Ripe
1 red bell pepper
1 green bell pepper
1 yellow bell pepper
