Toco Filling with beans and bulgur

Recipe Ingredients for Vegie Taco Filling

1 c water
1/2 c bulgur
1 onions
1 green peppers
8 oz tomato sauce
1 cup kidney beans
2 tsp chili powder
1 tsp cumin
1/4 tsp garlic powder
1/8 tsp cayenne pepper

Recipe Directions for Vegie Taco Filling

  1. Bring water to a boil in a small saucepan. Add bulgur. Cover, reduce

  2. heat to low and simmer 15 minutes til water

  3. has been absorbed.

  4. While bulgur is cooking, heat oil in a large nonstick

  5. skillet over medium heat. Add onions and green pepper. Cook

  6. til tender, about 5 minutes. Add tomato sauce, beans, spices

  7. and cooked bulgur. Mix well, mashing beans with a fork.

  8. Cover, reduce heat to low and cook 5 minutes.
