Wonderful, easy and is cooked in the slow-cooker!

Recipe Ingredients for Vegie Soup

8 cups vegetable broth
2 cups diced tomatoes
4 carrots, diced
1 cup red potatoes, diced
1 cup raw sweet potatoes, diced
1/2 onion, diced
1/2 cup red bell pepper, chopped
1 cup green beans
1 cup corn
1/2 cup barley
3 cups cabbage, chopped
4 cloves garlic, whole
2 tblsp fresh basil, chopped
1 tsp smoked paprika
1 tsp salt, (optional)

Recipe Directions for Vegie Soup

  1. Start with the vegie broth. Add: tomatoes, carrots, potatoes, onion, bell peppers, green beans, corn and barley. (Leave cabbage out.)

  2. Add fresh basil, garlic, salt and paprika.

  3. Simmer for about 3 1/2 hours. Add cabbage and cook for about another 1/2 hour, or until desired consistancy.

  4. 193 calories per serving (how good is THAT?)
