My version has mountain bread but the actual recipe calls for fresh lasagne sheets. Will still be low in calories.

Recipe Ingredients for Vegie & Beef Lasagne

170 g red onion
800 g mushroom
250 g spinach
1 egg
250 g ricotta, low fat
1 tsp garlic
1 tsp ginger
1 tsp chili
12 g Chia Seed
40 g parmesan
1 tsp tarragon
300 g zucchini
140 g carrot
400 g tomatoes, canned
300 g tomatoes
1/2 tsp black pepper
230 g ground beef
6 serving Mountain Bread - Tomato & Basil

Recipe Directions for Vegie & Beef Lasagne

  1. Preheat oven to 180C (356F). Place the ricotta, spinach, egg and half the parmesan in a bowl. Add the tarragon & chia seeds and season with pepper. Mix until well combined.

  2. Spray a large frying pan with olive oil. Add the onion, mushroom, garlic, ginger & chili. Cook, stirring occasionally, for 3-5 minutes or until soft. Add the mince and cook, stirring with a wooden spoon to break up the lumps, for 3-4 minutes or until browned. Add the canned tomatoes, chopped tomato, zucchini and carrot. Simmer for 10-15 minutes or until slightly thickened.

  3. Spread a thin layer of the meat mixture over the base of a lasagne dish. Top with 1 lasagne sheet (or mountain bread), trimming to fit. Spread with half the remaining meat mixture. Top with another lasagne sheet followed by the remaining meat mixture and the final lasagne sheet. Spread over the ricotta mixture.

  4. Sprinkle with the remaining parmesan. Bake for 50 minutes or until golden.

  5. NB: Mountain bread will take less time to cook.

  6. Let stand for 5 mins before cutting.
