delicious vegi dish...could easily add cheese/sourcream if for vegi (but not vegan). 12 HUGE servings...could easily be for 15-20 servings.

Recipe Ingredients for Vegi/Vegan Mexican Tamale Pie

6 cups zucchini
100 g red bell pepper
200 g yellow bell pepper
120 g green bell pepper
150 g mushrooms
211 g canned corn
220 g kidney chili beans
200 g vegetable broth
1/2 cup cornmeal
12 g taco seasoning
12 g cumin seed
5 g coriander seed
5 g garlic
10 g chili powder
400 g diced tomato
230 g tomato sauce

Recipe Directions for Vegi/Vegan Mexican Tamale Pie

  1. prepare cornmeal in vegi broth until thick

  2. sautee vegi's with seasonings (less tomatoes)

  3. add tomatoes, corn, beans, and heat through

  4. put in 9x13 pan

  5. top with cornmeal

  6. put the oven @ 400 degrees for roughly 40 min.
