low calorie vegetable version of stuffed green peppers. Omit rice for fewer calories (42.5 fewer).

Recipe Ingredients for Vegi-stuffed green peppers

4 large green bell peppers
125.42 g black beans (prepared, 15.5 ounce can)
1/4 cup rice (uncooked)
1/2 large white onion
2 tbls salsa

Recipe Directions for Vegi-stuffed green peppers

  1. Cut green peppers in half and seed

  2. wash and rinse black beans

  3. Dice onion

  4. Heat beans, onion, and salsa with a little water over medium heat until onion is soft. Add salt and pepper to bean mixture to taste.

  5. Cook .25 cup rice according to instructions (typically a 2:1 ratio of water to rice. This would be .5 cup water to .25 cup rice) Salt and pepper rice to taste

  6. Add cooked rice to bean mixture and gently fold in

  7. stuff the 4 halves of the peppers with the bean and rice mixture.

  8. bake at 350 until the peppers are soft and the mixture is bubbling.
