Recipe Ingredients for Vegi Fritatta

1 large (3" to 4-1/4" dia.) Potatoes, Boiled
4 large Egg, Whole
1 tbsp Grapeseed Oil
2 cup Broccoli Florets
1 cup (1" cubes) Eggplant
4 tbsp chopped Onions
1 serving Coarse Kosher Salt
0.5 cup Colby and Monterey Jack Shredded

Recipe Directions for Vegi Fritatta

  1. Sautee Vegis

  2. Crack egss and whisk

  3. Transfer Vegis to a baking dish and then add eggs, and top with the cheese

  4. Bake at 400 for about 20 minute and enjoy
