Recipe Ingredients for vegi egg white omelette

1 large Egg, White
1 ring (3" dia, 1/4" thick) Peppers, Sweet, Red
1 oz Avocados
2 large Egg, White
1 tsp Sour Cream
1 oz Cilantro

Recipe Directions for vegi egg white omelette

whip 3 egg whites, pour into a small saute pan and spread out. Put 1 ring red bell pepper, 1 sprig cilantro, 1 tsp sour cream and 1/8 avocado all chopped over one half of the round of egg. Let egg cook enough to flip. Fold in half over the vegetables. Turn after a minute. Sprinkle cheese on top, lower heat and cover while fixing the rest of your breakfast (coffee?).
