A mixture of fresh vegetables, cheese and eggs

Recipe Ingredients for Veggies & Steak & Eggs

7.75 oz Yukon Gold Potatoes
3 oz Beef, Round, Top Round
1 cup, chopped Squash, Summer, Zucchini, Includes Skin
0.5 medium raw Onion Yellow
1 Medium Tomatoes
2 wedge Light French Onion
1 cup ReddiEgg Real Egg Product
1 serving, raw Cilantro

Recipe Directions for Veggies & Steak & Eggs

  1. Use of pre-cooked round steak is necessary for this recipe (I sliced up some leftovers)

  2. Boil two yukon gold potatoes

  3. Dice onions, zucchini, tomato and cilanto

  4. Saute veggies in pan sprayed with olive oil pam until veggies are soft

  5. Add salt, pepper, italian seasonings, and dill to taste

  6. Remove potatoes from water when done, slice and dice

  7. Add steak and potatoes to veggie mixture and set aside

  8. Open two wedges of laughing cow cheese, add and mix into veggie/stead mixture

  9. In a shallow pan, spray with olive oil pam, heat and add 1 cup egg substitute, cook until done

  10. OK... here's the tricky part... arrange the eggs with the veggies as an omlet by placing the cooked egg on a plate first, then spreaking the cooked veggies and steak on top and then, if you can, folding the egg over, though it's somewhat tricky (If you prefer, you could cook the eggs into the veggie/steak mixture and serve as a type of scramble...

  11. Serve and enjoy (while this recipe makes 1 large serving, it could easily serve two people)
