Recipe Ingredients for Veggies - Sautéed Mushrooms, Peppers & Spinach

1 1/2 tsp extra virgin olive oil
3 cloves garlic
1/4 tsp cumin seeds
260 g red bell peppers, sliced
1 pinch lemon pepper
1/4 tsp oregano
1/4 tsp paprika
180 g mushrooms, sliced
60 g spinach, chopped
1/16 tsp salt
60 g Pasta Sauce
120 g canned corn

Recipe Directions for Veggies - Sautéed Mushrooms, Peppers & Spinach

  1. Heat oil. Fry garlic and cumin till fragrant.

  2. Add in peppers, lemon pepper, oregano & paprika. Cook till peppers are beginning to soften.

  3. Add in mushrooms and cook 2min. Add in pasta sauce and stir well.

  4. Add in spinach & salt. Allow spinach to wilt. Remove from heat.

  5. If using as a filling, e.g. for quesadillas, allow to cool before adding corn. Otherwise add corn when spinach has wilted and heat through.
