Low cholesterol version of egg "muffins" Makes 12 muffins. 2 muffins per serving. These are great on the run: simply nuke in microwave for 40 seconds. They freeze well too!

Recipe Ingredients for Veggies & "Sausage" Egg Muffins

20 oz Egg Beaters
3 medium (4-1/8" long) Onions, Spring Or Scallions
0.5 cup, chopped Peppers, Sweet, Red
0.5 cup, chopped Peppers, Sweet, Green
4 oz Veggie Breakfast Sausage Links
4 serving 2% Milk Reduced Fat Mild Cheddar

Recipe Directions for Veggies & "Sausage" Egg Muffins

  1. Preheat oven to 375.

  2. Line muffin tin or spray with non stick spray.

  3. Cook sausage links according to package. Chop and set aside. Chop all veggies and saute in non stick pan for 3-4 minutes until slightly brown and carmelized. Add 1 full carton of Egg Beaters plus 1/4 of another to equal "10 eggs." Pour in veggie mixture, sauage and 1/4 cup cheese. Mix together and add salt, pepper and/or hot sauce if desired. Pour into tin 3/4 of the way. Bake for 20-25 minutes until cooked and slightly brown.
