Found online, vegetarian version of Olive Garden soup. Substituted skim milk for heavy whipping cream, may try with half and half instead.

Recipe Ingredients for Veggie zuppa toscana

1 lb vegetarian sausage
6 strips
1 quart water
30 oz vegetable broth
4 large red potatoes
2 cloves garlic
1 med onion
1 cup skim milk
2 cups spinach

Recipe Directions for Veggie zuppa toscana

  1. Brown and crumble bacon and sausage, set aside

  2. Slice potatoes into halves and then 1/4" slices

  3. Add water, broth, potatoes, crushed/minced garlic and chopped onion to pot, simmer over medium heat until potatoes are tender (usually 15-20 minutes)

  4. Add "meat" to pot, simmer 10 minutes

  5. Add spinach (chopped kale or Swiss chard can be substituted, but I like me some spinach) and milk to pot, season with salt and pepper to taste, heat through
