A hearty vegan/vegetarian stew.

Recipe Ingredients for Veggie/Wheat Berry Stew

1/2 cup Wheat Berries
1 medium tomato, red ripe
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
1 yellow onion
5 medium Mushrooms
0.33 cup Organic Cherry Tomatoes
2 1/2 cup (8 fl oz) Water
1/2 tsp Garlic

Recipe Directions for Veggie/Wheat Berry Stew

  1. Cook wheat berries according to package directions. Set aside.

  2. Combine all other ingredients** in a pot. and simmer til soft.

  3. If desired, blend ingredients til slightly smooth (should still be chunky) and return to pot. If the stew is too thick, add more water. (Broth could also be used instead of plain water.)

  4. Add cooked wheat berries and stir. Add salt and pepper to taste.

  5. If desired, serve with bread or croutons.

  6. **These were just the ingredients I had on hand. You could easily substitute other veggies or grains (make it GF by using quinoa instead of wheat berries).
