brown rice, veggies and ground turkey

Recipe Ingredients for veggie and turkey stuffed bell peppers

4 bell peppers
1/2 lbs ground turkey
1/4 cup brown rice
1/2 cup celery
1/2 carrot
1/2 tomato
1/2 cup spinach
1/4 cup mozzarella
1 tbsp garlic
1/2 cup onion
14 1/2 oz stewed tomato

Recipe Directions for veggie and turkey stuffed bell peppers

  1. cut top off bell peppers, clean out inside and save tops

  2. chop all veggies and mix in large bowl

  3. add cooked brown rice and ground turkey, mix

  4. add mozzarella, mix

  5. stuff bell peppers put top back on

  6. pour stewed tomatoes over top

  7. cover with foil

  8. bake at 375 for about 45 minutes or until peppers and veggies are soft
