A tuna casserole that doesn't have mayo and is FULL of veg. Doesn't have to be baked, as there is no real crust in this recipe, but it helps thicken the sauce

Recipe Ingredients for Veggie Tuna Casserole

0.67 cup, chopped Broccoli
0.3 cup, chopped Carrots
0.5 cup, diced Celery
1.3 slice, medium (1/8" thick) Onions
1.5 can Tuna, Light, Canned In Oil
1.5 1tsp Olive Oil
4 cups Pasta Rotini
0.33 cup, large curd (not packed) Cottage Cheese, Creamed, Large Or Small Curd

Recipe Directions for Veggie Tuna Casserole

  1. Cook rotini and set oven to 200F

  2. Saute carrots, onions, mushrooms and celery until tender.

  3. Add broccoli and red pepper, cover for five minutes until broccoli is tender

  4. Pour in milk and cottage cheese, simmer until sauce has thickened. You may need flour. Season (chili and garlic salt recommended).

  5. Combine ingredients and bake for 10 min until sauce is thick
