Recipe Ingredients for Veggie Tomato Sauce

14 1/2 oz Diced Tomatoes, No Salt Added
15 oz Tomato Sauce
1 1/2 1tsp Olive Oil
1/4 medium (2-1/2" dia) Onions
2 clove Garlic
1 tsp Oregano, Ground
1 tbsp Rosemary, Fresh
1/4 tsp Creole Seasoning
1/4 tsp Salt, Table
1/4 tsp Pepper, Black
1/3 tbsp Chives, Freeze-dried
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
1 medium Squash, Summer, Zucchini, Includes Skin
4 oz Mushrooms
11/20 cup, grated Carrots

Recipe Directions for Veggie Tomato Sauce

In a 4-quart saucepan heat the oil over medium heat. Saute the onions until translucent, about 3 minutes, then add the garlic & cook for 1 minute more. Add tomatoes & sauce, chopped/grated veggies, & seasoning. Bring all the ingredients to a low boil, reduce heat & cook for approximately 15 minutes, until liquid has evaporated slightly. Season with additional salt & pepper as needed, to taste.
