Recipe Ingredients for Veggie-Tofu Breakfast Scramble

3 cups baby spinach
1 cup chopped onion
1 cup chopped green pepper
1 cup diced tomatoes
8 oz firm tofu
1/4 cup unsweetened almond milk
1 tsp garlic
1 tsp thyme
1 tsp marjoram
1 tsp miso

Recipe Directions for Veggie-Tofu Breakfast Scramble

Saute onion and peppers in the milk. Add tomatoes and spinach and cook until just tender. Squeeze liquid from tofu and crumble. Toss spices and tofu with veggies and continue cooking until tofu is lightly browned. Can be served in a burrito wrap, if desired.
