Recipe Ingredients for Veggie Taco

1 egg
2 T chopped onion
1 T chopped carrot
1 T chopped celery
1 flour tortilla
2 T salsa
1 t olive oil

Recipe Directions for Veggie Taco

Add olive oil to small fry pan and warm. Add chopped vegetables and stir fry till cooked. Add egg to pan, stir into vegetables, cook until egg is scambled/done. Spoon cooked mixture onto warmed tortilla. Add salsa.
