these are easy once you get the rice down. you'll need a bamboo rolling mat.

Recipe Ingredients for veggie sushi roll

1/2 cup sushi rice, prepared
1 sheet nori, pre-toasted
1 small cucumber, sliced and seeded
1/4 cup avocado, sliced

Recipe Directions for veggie sushi roll

lay down the nori shiny-side down and wetting fingers first, cover the nori evenly with the sushi rice. lay the fillings down the center in a horizontal line. Roll in bamboo mat and press down to secure. I like to cut mine into 8 rolls instead of 4 or 6 so they're more bite-sized.
