Carrot, Zucchini and Blue Cheese stuffed tomatoes

Recipe Ingredients for Veggie Stuffed Tomatoes

2 medium tomato
1 medium carrot, peeled and finely grated
1/2 medium zucchini, peeled and finely grated
1 cup plain bread crumbs
1 teaspoon italian seasoning
2 tablespoons blue cheese dressing

Recipe Directions for Veggie Stuffed Tomatoes

  1. Core and remove seeds from tomatoes.

  2. Combined carrot, zucchini, bread crumbs, seasonings and dressing to make stuffing.

  3. Stuff tomatoes with stuffing and place in baking dish with water 1/3 of the way up the tomatoes.

  4. Bake for 20-30 minutes in preheated 350 degree oven.
