Recipe Ingredients for Veggie Stuffed Peppers with TVP

0.3 oz Extra Sharp Cheddar
1 cup Couscous, Dry
1 cup TVP
25 ea. Raw Tomato Cherry
1 large Onions
2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
0.5 cup sliced Mushrooms, Brown, Italian, Or Crimini
2 slice Deli Style Sliced Mozzarella Cheese
2.25 cup (8 fl oz) Water
1 tbsp Soy Sauce
0.15 full glass (6.0 fl oz) Wine, Table, Red

Recipe Directions for Veggie Stuffed Peppers with TVP

  1. Boil 1 cup of water

  2. Place 1 cup of TVP in a large bowl with chopped onion, garlic powder and Italian seasonings.

  3. Pour boiling water over TVP, stir and cover. Allow to absorb (about 5 minutes)

  4. In a large skillet, heat 1 tbsp olive oil.

  5. Boil an additional cup of water. When water is boiling, remove from heat and add 1 cup of dry couscous. Cover and allow to absorb liquid (about 5 minutes).

  6. Slice tops from red bell peppers. Remove stems and dice the tops. Remove seeds and core from peppers and set aside.

  7. Add diced pepper to skillet and saute on medium heat 1-2 min.

  8. Stir TVP/onion mixture and add to skillet.

  9. Dice mushrooms and add to skillet.

  10. Slice tomatoes and add to skillet with any juice.

  11. Continue to saute until onions are translucent and tomatoes are soft.

  12. Combine cooked couscous, TVP mixture, shredded cheddar cheese, 1 tbsp dried basil, soy sauce and red wine.

  13. Boil peppers for 4-5 minutes, until they begin to soften. Remove from boiling water and immerse in a cold bath. Drain well.

  14. Lightly pack filling mixture into peppers.

  15. Cover each pepper with 1 slice of mozzarella cheese.

  16. Bake at 350 degrees for 20 minutes.

  17. (Note: recipe makes enough filling for 4-5 medium peppers)
