Bell peppers oven roasted with chickpea stuffing.

Recipe Ingredients for Veggie Stuffed Peppers

2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 cup Garbanzo Beans (Chick Peas), Organic
1 stalk, medium (7-1/2" - 8" long) Celery
0.5 serving Blue Dragon Sweet Chilli Sauce
1 oz Ginger
1 piece Fresh Garlic
2 medium raw Carrots
4 tsp Spices Ground Coriander

Recipe Directions for Veggie Stuffed Peppers

  1. Mix together a tin of chickpeas ,a stalk of sliced celery ,2 sliced carrots , thumb sized fresh ginger grated , crushed garlic clove , 2 tbspns ground coriander , 2 tbspns sesame oil , 3 tbspns sweet chill sauce , tabasco and salt and pepper to your liking.

  2. Fill two bell peppers (halved)

  3. Leave in preheated oven (170'C) for about 20mins. Longer if you don't like crunchy carrots
