Recipe Ingredients for Veggie Stuffed Peppers

3 large green peppers
1 1/2 cup reduced fat shredded mozzarella
1 cup brown basmati rice
1/4 cups parsley
14 1/2 ounces diced tomatoes (one regular can)
3 tbsp garlic (I used the minced in water, but feel free to use garlic powder or the real deal!)
1 tbsp olive oil

Recipe Directions for Veggie Stuffed Peppers

  1. Cook rice (it takes almost an hour, so I usually do it while I prepare)

  2. Cut peppers in half and place on baking sheet

  3. Mix diced tomatoes, garlic, and parsley together adding rice when it's done cooking.

  4. Add filling into halved peppers.

  5. Evenly distribute cheese over the top of the stuffed peppers.

  6. Cook 10 minutes uncovered, then cover for another 15-20 minutes until peppers are tender.
