Recipe Ingredients for Veggie Stuffed Macaroni & Cheese

8 oz. whole wheat penne
2 T. bread crumbs
1 t. melted butter
1/4 t. paprika
1 3/4 c. non fat milk
2 T. all purpose flour
1 1/2 c. shredded reduced fat cheddar cheese
1 c. 1% fat cottage cheese
1/4 c. parmesan cheese, grated
1/2 t. grated nutmeg
1/2 t. salt
1/4 t. black pepper
6 c. fresh spinach, shredded
1 1/2 c. canned diced tomatos, with liquid

Recipe Directions for Veggie Stuffed Macaroni & Cheese

Preheat oven at 375. Lightly coat a 9x13 baking dish with cooking spray. Cook the pasta according to the pkg - drain and set aside. Mix the breadcrumbs, butter and paprika in a small bowl and set aside. Heat 1 1/2 C. of milk in a med saucepan over med hi heat until steaming. Wisk remaining milk and the flour in a small bowl until smooth. Add to the hot milk and cook, wisking constantly until thick. Remove pan from heat. Add the cheddar and stir til cheese is melted. Stir in the cottage cheese, parmesan, nutmeg, salt & pepper. Stir the pasta into the cheese sauce. Spread half of the pasta mixture into the baking diish. Place the spinach evenly on top, then the diced tomatoes. Spread the remaining the pasta mixture over the tomatoes, then the bread crumb mixture. Bake until bubbly and golden, 25-30 mins.
