Recipe Ingredients for Veggie stuffed baked potato

1/2 pound potato (large), baked
1/2 cup brocolli, chopped fine
1/2 cup cauliflower, chopped fine
14 grams bacon, (2 slices) cooked and chopped
2 tablespoons light sour cream
2 tablespoons salsa

Recipe Directions for Veggie stuffed baked potato

  1. Bake potatoe in microwave 7 to 8 minutes. cook bacon, drain and coursely chop. Chop all veggies (or use a salad shooter to chop).

  2. Split potato open, add veggies and top with sour cream and salsa
