Recipe Ingredients for Veggie Stuffed Acorn Squash

2 squash (4 inch dia) Squash, Winter, Acorn
2 tbsp Vegetable Oil, Canola
6 tbsp chopped Onions
1 1/2 cup flowerets Broccoli, Flower Clusters
2 cup, pieces or slices Mushrooms
1/4 cup Raw Walnuts
2 tbsp Basil, Fresh

Recipe Directions for Veggie Stuffed Acorn Squash

  1. Heat oven to 400 degrees.

  2. Cut Squash in half & remove seeds. Rub cut flesh with salt and place flesh side down in baking dish. Bake for 35 minutes.

  3. While baking, saute onions in canola oil until clear, add chopped broccoli and mushrooms, saute 4 minutes.

  4. Stir in walnuts and basil. Sprinkle with brown sugar and soy sauce (adjust to taste). Toss to mix well.

  5. Check baking squash with fork to see if it glides through the flesh.

  6. Stuff with veggies, top with cheese and return to oven for 5 minutes. Serve immediately.
