Very versatile homemade veggie stock.

Recipe Ingredients for Veggie stock

2 medium raw Onion Yellow
4 medium Carrots
6 stalk, medium (7-1/2" - 8" long) Celery
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
5 clove Garlic
1 medium raw Leeks
10 medium (4-1/8" long) Onions, Spring Or Scallions
12 cup (8 fl oz) Water
2 dash Salt, Table
4 dash Pepper, Black

Recipe Directions for Veggie stock

Cut all veggies up very large, leave skin on onions, cut in half, cut pepper in quarters, smash garlic and throw in with skin, etc. Put in 12 cups water, and salt and pepper. Bring to boil, then let simmer on medium for about an hour or two until it has boiled down half of water. Let cool completely and drain. You should get approx 6 cups of veggie broth. Freezes very well in one cup portions.
