Veggie Stir Fry w Tofu and Kale 1 serving = 1 cup

Recipe Ingredients for Veggie Stir Fry w Tofu and Kale

2 1/4 block tofu
70 g broccoli
200 g red pepper
75 g celery
150 g onion
1 3/4 T olive oil
90 g kale
100 g mushrooms
2 cloves garlic

Recipe Directions for Veggie Stir Fry w Tofu and Kale

  1. Warm oil.

  2. Sautee minced garlic and ginger in oil for 15 seconds.

  3. Add onion. Cook until translucent (2-3 mins).

  4. Add tofu and 1 T soy sauce, and cook for 3-4 minutes to brown tofu, stirring occasionally. Add 1-2 T of water if pan is dry.

  5. Add celery. Cook 1 min, stirring.

  6. Add all vegies but kale, and cook for 2-3 mins. Add kale, and cook 1 minute.
