yummy veggie stir fry. Easy to cook and made in one Pan (or Wok preferably if you have it)

Recipe Ingredients for veggie stir fry

1 small zucchini
1 small yellow bell pepper
1 small orange bell pepper
1 small red bell pepper
1/2 med onion
10 small mushrooms
3 medium carrots, peeled
4 cloves garlic
1/4 tsp ginger, grated
1 tsp soy sauce
2 tsp extra virgin olive oil
1/8 cup broccoli
2/3 cup snap peas
1 tsp corn starch

Recipe Directions for veggie stir fry

  1. chop all veggies. I like to do them in jullienne but you can chop them how ever is easiest for you.

  2. Saute them in olive oil starting with carrots and broccoli, then add the rest after you've cooked the harder veggies for about 10 min.

  3. mix soy sauce, corn starch and about a 1/2 cup of cold water. Mix in with veggies once they are done and stir constantly until the cornstarch mixture thickens.

  4. Serve over rice or noodles and enjoy
